Equipment

I use a 7 quart slow cooker.

Ingredients

  • bones: I use a mix of beef, lamb, and pork, or use one type, 5-7, depending on size.

  • carrots, 3, 2 inch chop

  • celery stalks3, , 2 inch chop

  • onion, 1 large, coarsely chopped

  • parsley, several sprigs

  • thyme, several sprigs

  • garlic, 5 to 7 cloves

  • lemon, halved

  • apple cider vinegar, a tablespoon or two, then more at the end to taste

  • sea salt, coarse, kosher

  • pepper, fresh cracked, several grinds

  • I added fennel because I found it in my fridge

Directions

  1. Put all in a slow cooker, cover with water, set on low, and simmer for 2-3 days. Strain, store in glass jars, and enjoy a cup everyday or use in your favorite recipe.

    As you sip you’ll feel younger by the minute :-)
