Recipe: Canned Bean & Corn Salad
This morning I encouraged, (read- demanded :-) my mother stop watching the news because it was stressing her out, and in turn lowering her immune defenses. I also reminded my children and clients, now that they’re home, to be mindful of what and how much they are eating. Keeping track of everything you eat is simple and will help you stay healthy during this stressful time. Use a piece of paper, or a free app like myfitnesspal.com.

Bean & Corn Salad
Ingredients
beans, canned, (any kind)
corn, canned
cilantro, chopped (if you can’t get fresh cilantro use dried oregano, basil, parsley, etc)
red onion, chopped
avocado, chopped
limes, fresh squeezed (use your favorite vinegar in place of limes)
olive oil
sea salt
Prepare
Open the cans, drain, peel and chop onion and avocado, chop cilantro, add to a bowl, squeeze limes, drizzle with oil, sprinkle with salt, and enjoy.
