Better than Chipotle, Sol bowl recipe
My daughters, Anna and Emma love Chipotle. I love for them to be healthy. Our compromise is, I encourage them to dine out only occasionally, and make a Chipotle like bowl at home. That was the inspiration for my Sol Bowl.
What is a Sol Bowl? Imagine a Chipotle bowl, but better, because you’ll make it with ingredients you bought yourself, so you know they’re healthier. I think there are healthier “fast food” alternatives today, but when you and I dine out, we can’t be sure of the quality of the food we are eating. When we shop, we can buy healthier foods without pesticides, antibiotics, and other harmful additives that don’t belong in our foods. Did you know that some preservatives, additives and flavorings in fast and processed foods makes it difficult to concentrate, feel good, and lose weight? Many of these substances are in pseudo healthy foods like sugar free non dairy creamers and high sugar protein bars. So, make your own Sol Bowl, like this:
Sol Bowl Recipe
Ingredients (organic when possible)
spinach, arugula (any mixed greens you like)
beans (canned; black, red, whatever you like)
guacamole (prepared or recipe here)
salsa
peppers
onions
tomatoes
lime juice
cilantro
cheese (optional)
grilled chicken (optional)
To prepare
Make a base of greens, then layer your favorite ingredients on top, and sprinkle with chopped cilantro, squeeze of lime, grind of salt, and enjoy!
