The owner tells me it comes from his wife’s birthplace, Corfu, A Greek island in the Ionian see with a cultural heritage reflecting years spent under Venetian, French and British rule before it was united with Greece in 1864. The dill and scallions are the subtle stars in this Mediterranean salad.
