In this 2 hour class, Peter will share everything you need to know to make delicious, healthy, home baked sourdough bread from scratch. Because it’s a 3 day process, you’ll make a starter with Peter, then he’ll demonstrate every other step you need to pull the most delicious bread from your home oven.
For 8 years I’ve been obsessed with pulling the best possible loaf of sourdough bread out of my home oven. I must say, humbly, this is the most delicious bread I have ever tasted. Amazed by the reactions of tasters, I immersed myself into learning from the worlds best bread bakers through books, conversations, and the internet, including Chad Robertson, whose recipe in his excellent book, Tartine Bread, is what my recipe is based on. I first read about Robertson’s bread in a book called Cooked, by one of my favorite authors, Michael Pollan. I also learned a ton on this website- The Perfect Loaf. Compelled to share this gift with the world, my bread appeared in several NYC restaurants and local shops for a short while, until the demand practically melted my poor, overworked, home oven. So now, after numerous requests from family, friends, and followers, I’m ready to share everything I’ve learned about baking sourdough bread at home. It’s time.

How to make delicious sourdough bread from scratch using a “turning” method. No kneading.
How to make, feed, and know when a starter is ready.
How to make and know when a levain is ready.
You’ll learn a special blend of three flours to create a sweet, moist crumb, and crispy crust.
*You and Peter will make a starter together, then he’ll show you the remaining steps for pulling the most delicious bread from your home oven.

Cast Iron Dutch Oven or Le Creuset type dutch oven
Bench scraper
Digital scale
Small round glass bowl with lid (for starter)
Large bowl to mix dough
Heavy duty oven mitts (Rated to handle 500 degree F temps.)
Lame, a bread scoring knife
Home oven, gas or electric work with this recipe (I’d invite you to use mine, but it’d be a bit crowded :-)
