6th Family and Friends Table

Old friends, new friends, now great friends- We gathered together to share good food and better talk. The conversation ranged from raising kids to sharing recipes and medical advice, to yoga. We sat at the table without judgement and spoke, then let speak, acknowledging, supporting, and validating. I sensed kindness and empathy flowing between my guests, something, in my opinion, the world could benefit from more of right now. That was my vision last year when I dreamed of building a table, surrounding it with people I cared about, while serving food that nourished them. I never would have guessed doing that, plus sharing my memoir would reconnect me to my oldest childhood friends, connect me to complete strangers, and connect me deeper to my physical therapy patients, family, and friends. If you’d like to read the prologue of my memoir, then connect with me, I welcome the authentic interaction. Link below.

To my guests, thank you for bringing your smiles, inspiring stories, and friendship to the table (and desserts 🙂. Until next time…

How I Survived, Then Thrvived After Covid-19

I've got great news for you, and to be honest, I'm so compelled to share it because, still, as what I can only say is a head-scratcher, I don't hear our elected representatives or health officials remind us, besides considering vaccinations and practicing safety, there's something else that you and I can do for ourselves and for the people we love and care about, to empower us and protect ourselves, and that's to support our immune system, a topic that to me seems to have been completely bypassed by the media. If you’re interested in how I helped myself, and my children during Covid, please watch, or read below.

Sending strength, love, and support to you and your family.

Past Too Painful?

“Not thinking about my past doesn’t mean it doesn’t affect me” A viewer recently shared it’s too stressful to think about her past. Doing so is too upsetting, so she tries not to go there. I understand. That’s how I felt for 50 years. Ultimately, ignoring my past hurt me. To go forward, I had to go back, and that finally quieted the past. That’s why I wrote my memoir, Perfect Peter; And Why I Hated Him. Going back wasn’t about blame, it was for understanding. And through understanding came healing. Today I can say I know exactly where my fear, anger, anxiety, and judgement come from. Now, I can quiet those emotions and live a happier, more engaged life with those I love. I hope that helps you. Remember, if you struggle, you’re not alone, regardless of what you see on Facebook. Best Mushroom Side Dish

Stuck for a side dish? I love mushrooms sautéed over blistering heat with some shallots, olive oil, salt, and either Sherry or good quality balsamic vinegar, not the glaze added sugar kind. That’s sautéed spinach in the background with lots of garlic. Tip- mushrooms needs high heat to get their moisture out, then they’ll caramelize. Enjoy! #recipes #mushrooms #sidedish #plantbased #healthcoach #nutritionist @peterkofitsas

Sourdough Starter

This is a fun video for my friends who bake sourdough bread. I’m happy to discuss technique, as sourdough is a fickle, live entity. Sometimes, a magnificent loaf is pulled from my oven, and sometimes a dense mass is pulled from my oven. Humbling. I got the recipe from @michaelpollan book who got it from Chad Robertson at @tartinebakery You can also do a search on the @newyorktimes #cooked #sourdough #tartinebread #healthy #cooking #recipes #bread #healthcoach #author #speaker @peterkofitsas

Value of A Therapist

There is a scene in the movie, A Beautiful Mind, the true story of a Princeton genius played by Russell Crowe, that confirmed for me the value of a good psychotherapist. Crowes character tells a therapist, I don’t need your help. I’m a genius, and solve problems using my mind. The therapist replies, how can you solve your problems with your mind, when your mind is the problem? I related to that. I needed a good therapist to not only help me identify my anxiety, depression, anger, fear, judgement, etc. but also exactly where it came from (for me, it came from childhood, from one person specifically. If interested, you can read about it in my memoir. Link below) I’d share my memoir writing with Frank, my therapist, we’d discuss it, then I’d heal. I could not have figured it out on my own.
Though I encourage all my family, friends, physical therapy patients, and clients to talk to a therapist, some tell me, “I could never be completely honest with my therapist because they would judge me.” I remind them, "That, my friend, is not the right therapist for you. Keep looking, and you will find a better one.” Memoir link- https://www.peterkofitsas.com/perfect-peter #psychotherapy #therapy #abeautifulmind #russellcrowe #anxiety #depression #memoir #perfectpeter #familydysfunction #healing #recovery #happiness #healthcoach #speaker @peterkofitsas

Maybe You Can Help Me With My Memoir

My highschool coach taught us, "Surround yourself with good people, and good things will happen for you." That's one of the reasons I'm connected to so many good people on social media, including you 🙂. May I ask a favor? If you know a literary agent or book publisher that may be interested in my memoir, please pass this info along. I'm looking for someone that understands family dysfunction, the hole it leaves, and how to fill it from the inside out. Thank you my friend. #memoir #familydysfuntion #happiness #healthcoach #healing #forgiving #love #family #friends @peterkofitsas
