7th Family & Friends Table
"I should have built a bigger table." That's one of the thoughts that ran through my head as I listened to new and old friends share, laugh, listen, and love. If I could, I would invite everyone in the world to my table that’s looking for authentic relationships to share their experience, strength, and hope in a safe and supportive environment. (Then I’d have to make a whole lot more Spanakopatata, the hot dish of the day- more on that at FB) But the truth is, 10 friends seems like the right number to share one, inclusive, enlightening, encouraging, non-judgemental, and at times, heartbreaking conversation, with small breakouts that go in the directions they are meant too. I heard my guests offer support, recipes, child raising tips & lessons of loss, love, and hope. The sage of our group shared he was impressed by the amount of growth he heard around the table. For me, I felt pride calling these people, and others, friend, who inspire and remind me, we are all the same, just wanting to love and be loved. To be honest, though I feel compelled to share the remarkable personal stories my guests courageously shared, including racism, abuse, abandonment, and death, because I think we can all benefit from them, I won’t, out of respect for their privacy. Maybe that will be my next book, after my memoir’s published (Writing and sharing my memoir reconnected me to old friends, connected me to new friends, and made friends & family table a reality though manifestation- Memoir link in bio). Until next time. Sending love, hope…

Healthy Beach Salad Part 1
I love to indulge while on vacation while still eating healthy. How? Simple- I have fruit for breakfast, make salads for lunch, then indulge at dinner. Try this quick and easy healthy beach salad- organic greens, grilled veggies, and add whatever accouterments you like- olives, artichoke hearts, roasted peppers, etc, and your favorite protein. I used steak from last nights dinner. Watch part 2 for a simple, delicious, healthy dressing. Enjoy! #healthy #vacation #salad #beach #recipe #organic #thehamptons #healthcoach #speaker #healthcoach @peterkofitsas
Healthy Beach Salad Part 2
Try this fast, delicious dressing to drizzle over your healthy beach salad. 3 parts olive oil, 1 part red wine vinegar, 1 tbsp dijon mustard, 1 tbsp chopped garlic, or onions, or both, grind of sea salt. Mix well in container, then pour over salad on the beach. Enjoy! #healthy #vacation #salad #beach #recipe #organic #saladdressing #thehamptons #healthcoach #speaker #healthcoach @peterkofitsas
The Lost Boys of Montauk
Every once in a while I read a book that stays with me. Amanda Fairbanks’, The Lost Boys of Montauk, is one of those books. In it she writes about the tragic true story of four men who vanished at sea, and the families they left behind. If she stopped there it would have made for a riveting story, but she went deeper, exploring the generational traumas that often lie under the surface of most tragedies, still affecting the survivors 37 years later. I connected to the respectful, honest way the struggles that many of us experience in our own families and relationships were explored in this book, whether they were wealthy manhattanites summering in “The Hamptons,” or local fishing families living off the sea (my sympathies for all the families involved). She also shared something my favorite authors do, what motivated her to tell this compelling story. Though full of heartbreak and loss, the book does end with hope. Oh, and she was so cool about meeting and signing my book, a thrill for me to meet authors I admire. It probably seems obvious- I recommend this book :-). Enjoy, my friends! I purchased it at Canio’s in Sag, Harbor, NY (You can buy online-https://bookshop.org/shop/caniosbooks, or #amazon. @amandamfairbanks #thelostboysofmontauk #greatbooks #montauk #thehamptons #author #read #books #summerreading
Some good news regarding covid
Hi Friends,
I want to share what I see as a little bit of light at the end of a long tunnel. Data coming out of Israel, the Cleveland Clinic, Emory University, and Nature.com demonstrate that if people are vaccinated against covid 19, or have recovered from covid 19 and are not vaccinated, they have protection regarding covid 19 re-infection. That is good news, especially for the natural immune system, which Israel's health ministry data showed was 6.7 times more likely to protect against reinfection vs someone who is vaccinated. So, regardless of where you stand regarding covid 19 vaccination, I see this as encouraging news. It makes sense for us to take care of ourselves by supporting our immune system naturally. I wish you and your family great health. Please let me know if I can help with that.
Protein Probiotic Punch
Sometimes, the food I choose is as much about function as flavor. Like this combination of protein from the roast beef, and probiotics from the sauerkraut. The mustard has some quality that is shown to decrease muscle cramps, so that can’t hurt either. I love this snack especially after a work out to make sure I’m getting the protein that I need while I’m helping my body digest with the probiotics. Make sure your sauerkraut is the refrigerated kind otherwise it does not contain probiotics. Also make sure your roast beef is organic or grass fed. Enjoy the protein, gut health, immune boost. #probiotic #immunesystem #health #healthcoach #healthspeaker #protein #peterkofitsas @peterkofitsas
