3 Delicious Cooking Tips

Dear Friend,

You probably know this- The more you and I cook 🍲 at home, the healthier we are.

Why?

One reason is, we use healthier ingredients.

Another reason is, if we cook with ❤️, sit with those we love, being present, the food tastes better, helps us digest better, making us healthier.

Here are 3 tips that can help your food taste delicious, help you digest better, and be healthier:

Cook with Olive Oil

For years so called experts said, “Don’t cook in olive oil, it has a low smoke point.” Then I’d see my Greek mother frying, sauteeing, and drizzling anything and everything with olive oil, like they’ve been doing in the Mediterranean since ancient times (And living the longest, healthiest lives).

According to research, (and common sense), “a high-quality extra virgin has a smoke point of around 410 degrees Fahrenheit. Its chemical structure and its healthful antioxidants protect the oil from heat during cooking. That makes extra virgin olive oil fine for sautéing, roasting, frying and even deep frying.”

I recommend buying a high quality oil (Make sure it’s extra virgin). My favorite is from Koroneiki olives, called Kalamata olive oil, which I get from my mother’s village in Greece. Follow link for similar product.

Sweeten Sauce Without Adding Sugar

If you’re making a sauce, ie marinara, or soup, or other dishes with onions as the first ingredients, let them gently sweat for a full ten minutes. This will evaporate the water in them, leaving you with natural sugars that sweeten your sauce. That’s why I don’t need to add sugar to my red sauce. Saute in olive oil keep the heat low, stir often, and don’t let them brown (That will alter alter the taste). Then

Add Flavor Without Acid

If a recipe calls for lemon or lime, use the zest as well as the juice. This will make your dish more lemony, or limey (no offense meant to my UK friends :-), without adding to much acid, overpowering the sauce. Zest the fruit before cutting (tough to zest a halved lemon),
