Sol Bowl, Guacamole, & Black Bean Salad
Get out your cutting board, sharpen your knives and have your ingredients ready as you create your own Sol Bowl with Peter in this fun, cooking skill enhancing, interactive cooking class. Create a delicious, better than Chipotle, Sol bowl by using healthy ingredients and tricks of the trade cooking tips that will take your cooking to the next level! You’ll also learn how to make creamy guacamole and a refreshing black bean salad!

Ingredients (Organic, if possible)
Sol Bowl
spinach, arugula, 1 box or bunch (or any mixed greens you like)
beans, 1 can; black, red, or whatever you like
guacamole (prepared or homemade)
avocado, 1 or 2, depending on the size of your family :-)
salsa, 1 jar, or homemade
peppers, 1 red, yellow, orange, or green
onions, 1, I prefer red onion for this dish
tomatoes, 2-3, I use Romas, but use whatever you can find/love
limes, 3, juice, and zest
cilantro, 1 bunch
cheese (optional) shredded Mexican, or your favorite
olive oil
sea salt
optional- grilled chicken, beef, or any protein you like
Guacamole
avocados, 4 ripe, peeled and chopped
tomatoes, plum, 1 large or 2 small , chopped
lime, fresh juice of half or more, and zest
red onion, 2- 3 tablespoons or more
jalapeno pepper, 1 tablespoon or more if you like heat, halved, seeded and chopped fine, (you can also use a dash of tabasco sauce if you prefer)
cilantro, bunch of fresh, chopped (1/2 cup)
sea salt to taste

Zester (if you have one)
Large bowl, and several small bowls
Sauteing pan
